Recipe: Pineapple Upside-Down Cornmeal Cake
Results: I had a really bad day today. Really bad. I turned to food as solace. Bad, I know. But, I didn't care. I'd been wanting to make this cake since I saw AB make it last week. I love pineapple, and the skillet method intrigued me. I had everything to make it except pineapple rings. I had crushed pineapple. I didn't have coarse cornmeal, I had corn flour. I didn't have whole milk, but I had 1% and cream. No maraschino cherries. Overall, It turned out really well, I think and was fairly easy & straightforward to make. A definate keeper.
